Hi Lynda, they are basically fried once for about 5 minutes and then taken out of the oil and rested and then fried again. Its meant to make them even crispier and fluffier

Twice-fried potatoes seems to be the “in thing” for potatoes. I’ve resisted the urge, not because I don’t like them but just the opposite. Once that pot of oil heats up, there’s no stopping me. There are potatoes, calamari, chicken, mushrooms, fish, you name it, to be fried. I know: I’m weak.

Mind you I know what you mean about frying, why is it that food tastes sooooooo good when it’s been fried?!

Thanks, it was a giggle to make it. You know I don’t know how long it all takes, I’ll have to make them again (shame, shame!!) and double check exactly what I do.
I haven’t had home-made chips in ages… but I have never thought about twice-frying them! I must try it next time I fry potatoes. And also take several different varieties to have more fun 🙂

Hi Sissi, and thank you, to be honest with both of us making it, it didn’t take very long, but we had such a laugh doing it!
I don’t often have homemade chips either, only when I grow these particular potatoes, and as it wasn’t a bumper crop for me this year we’ll only have a few meals with them.

Every year I say to myself I won’t grow so many potatoes, they take up too much room etc, and then I taste a few and I’m hooked again!
